Chicken Fajita

Ingredients:

  • 1 lb boneless, skinless chicken breasts, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 2 tablespoons fajita seasoning
  • 2 tablespoons vegetable oil
  • Flour tortillas
  • Optional toppings: salsa, sour cream, shredded cheese, guacamole

Instructions:

  1. In a bowl, toss the sliced chicken with the fajita seasoning, ensuring each piece is coated evenly.
  2. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  3. Add the sliced chicken to the skillet and cook until browned and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add another tablespoon of oil. Add the sliced bell pepper and onion. Cook until the vegetables are tender-crisp.
  5. Return the cooked chicken to the skillet and toss everything together for a couple of minutes to combine and heat through.
  6. Warm the flour tortillas in a dry skillet or microwave.
  7. Serve the chicken and vegetable mixture in the warm tortillas. Top with your favourite toppings.

Mexican rice bowl

Ingredients:

  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges
  • Salt and pepper to taste

Instructions:

  1. Rinse the rice under cold water until the water runs clear.

  • Shredded mozzarella cheese

  • Olive oil
  • Italian herbs and garlic powder (optional)

Instructions:

  1. Preheat your oven according to the pizza dough instructions.
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the rolled-out dough to a pizza stone or baking sheet.
  4. Spread a layer of tomato sauce over the dough, leaving a small border around the edges.
  5. Sprinkle a generous amount of shredded mozzarella cheese over the sauce.
  6. Add your favorite toppings evenly over the cheese.
  7. Drizzle a little olive oil over the toppings and sprinkle with Italian herbs and garlic powder if desired.
